Egusi (also known by variations including ewgusi, agusi, ohue, agushi) is the name for the protein-rich seeds of certain cucurbitaceous plants (squash, melon, gourd), which after being dried and ground are used as a major ingredient in West African cuisine. It is grown predominantly for their seeds which are similar in size to small pumpkin seeds and are similar in flavor.
Egusi soup is a staple soup in homes and bukas across Nigeria and in many parts of West Africa. Egusi seed is the main ingredient.
